Monday:  Dinner Out or Leftovers depending on how late I'm at work
Tuesday: My Egg Drop Soup and Gyoza,  Hot & Sour Soup by Simple Recipes and Sesame Chicken from SugarCrafter
Wednesday: Pizza at Home
Thursday: Picking up a deli rotisserie meal, easy $10 dinner and can use leftover for tomorrow!
Friday: Chicken Alfredo Bake
Saturday: Chicken Tetrazinni
Sunday: Cookout

Menu Planning Monday: April 12

Here's what's cooking in my kitchen this week:

Monday: Tacos, easy and tasty! (cooking up extra ground beef for tomorrow's meal)
Tuesday: Last Minute Ziti
Wednesday: leftovers, since it's a busy night!
Thursday: Breakfast for dinner, I love this! Sun-dried Tomato Scramble and trying out my new juicer! :)
Friday: For the love of cooking's Beef Pot Pie (moved from last week)
Saturday & Sunday: out of town, going to visit some friends and go to Ikea!! :)

Pizza at Home

Here's a quick way to fancy up one of those take & bake pizzas they have a Sam's Club!
The cheese pizzas we're just $4 the other day
I looked around the kitchen and grabbed the following items: a block of cheddar cheese, some fresh tomatoes, jalapenos, and green peppers. I thinly sliced tomatoes, chopped the jalapenos and green peppers, and then laid them out on the pizza. I didn't put that many jalapenos on one side since I'm not a huge fan of them on my pizza, so I added extra cheese on it. Then, grated the cheese right over the top of the pizza. Then placed it in the over for the time that the box stated, (12-15 minutes).

And here's the pizza right out of the oven!
Yummy!

See simple way to dress up a pizza with ingredients you already have on hand.
It's easy to add leftover chicken or ground beef, as well as any cheese or veggies you want.

What is Fresh this Spring!

Springtime is the best time for FRESH veggies and fruit. I took a trip to my local flea/farmers market and purchased one grocery bag full some 'right off the truck' veggies for under $8. The trick to buying local produce is to know what's in season ahead of time! We purchased tomatoes, carrots, a variety of peppers, radishes, and some fresh limes.

Here's a quick list of what to buy this spring:
-Carrots (very tasty, and easy to grow in your yard)
-Peas (yum!)
-Asparagus
-Artichokes (which I've tried to work with but have been unsuccessful, if you have a tip let me know!)
-Strawberries (easy to grow yourself!)
-Blueberries (I love to go handpick them!)
